What is Two Tooth (Hogget)?

Lambs are typically up to around 12 months of age and still have their milk teeth.

As sheep mature, they begin replacing their milk teeth with permanent teeth. A Two Tooth (Hogget) has no more than two adult incisor teeth and is generally around 13 months to 2 years old.

The result is meat that remains tender like lamb, but with a slightly darker colour and a deeper, more pronounced flavour — making it a favourite for those who enjoy a little more character in their meals.
